Go to the Recipe: Dutch Baby With Berries and Crème Fraîche With Nik Sharma
Can the Dutch Babies be made from almond flour? Are the measurements the same? I have type 2 diabetes.
I saw that Nik was using the Joule oven which I also have. One detail he doesn't mention but I've discovered through many takes on different recipes is that Convection should be turned OFF. For some reason the fan tends to inhibit the rising.
We have not tried that out, how ever almond flour would most likely not work out the same. I would start with cup for cup as a gluten free sub.
I've had good luck with King Arthur and Namaste GF flour, using the ratio of 4 eggs, 1.5 cups milk & 1 cup flour for an 8 inch pan. Double it for a larger one. I usually bake at 375, haven't tried 425, so it takes a little longer. If you're feeling fancy, saute up some apples, pears or peaches before adding the batter.
In the video he seems to be brushing the pan with butter and put it in the oven to heat it.
In the instructions it's the other way around: heat pan and after that brush pan with butter
Which way is it?
Excellent recipe, I will definitely do it again (did mine with fresh vanilla and used barrel aged maple syrup on top)
This worked just as well in a standard, 9” round cake pan if you don’t have an 8” x 3” like the recipe called for.
