I'm going to need a banana cream version! Can I just add bananas?
I would suggest adding some banana extract or banana liquor to the base. And/or folding in fresh bananas after the base is blended into pudding.
Why add the vanilla in the boiling step? Aren't you just burning off all the aromatic compounds?
Nope, you are infusing the liquid with the vanilla and cooking off the alcholol. Any time you can smell something you are loosing aroma compounds! But it's at a rate that is inconsequential.
Made this today (had to wait until I could find a supply of gellan in Canada that didn’t require a gold bullion shipment). Used roasted cashews because that’s what I had available. Turned out really well. I may need to get myself a longer temperature probe, it was steamy in that blender! Anyway, I’m excited to try the other vegan pudding recipes next.
