Looks great! I wonder if this could be spiked and aged in the fridge for longer than a week, as a spiked egg-based eggnog can...?
The booze will extend the life but remember only half of this is cooked or pasteurized. Fresh nut milk only has a shelf life of 1 week.
Does this recipe call for Cassia (common) or Ceylon (“true”) cinnamon?
Whatever you prefer. Cassia has more pronounced oils and stronger cinnamon flavor while Ceylon is more mellow and is my choice for cinnamon.
