I understand that the process uses wheat flour and washes it to separate the gluten and the starch. Can you skip this step and use Vital Wheat Gluten instead? How would you do that? What about whole wheat flours? I grind my own flour, so do not keep white flours in the house.
I do not recommend using commercial VWG for Seitan. It has off flavors and the flavor is not as clean.
Whole wheat works good for making seitan. The color is what you would expect but very tasty. I assume that the original seitan was more whole wheat.
