I'm in the UK and it isn't easy to find sodium hexametaphosphate here at food grade. Even my go-to molecular gastronomy shops don't stock it. Is it possible to suggest an alternative?

They do indeed, however 50g of the salt is 15 dollars, with shipping being roughly 50 dollars with additional import fees likely. I'd be keen to avoid that if I can.

Using just sodium citrate should be fine
I notice in the video Grant does not use sodium hexametaphosphate. I do use it so just an observation. That said, If I want to add a bit extra Sodium citrate (or citric acid?) to my recipe to make the cheese more tangy, will it make it softer? I love the density of the base recipe so I don't want to stray from there.
