Hello, Crab is a little hard to come by where I'm at, what are your thoughts on substituting shrimp and using there shell and tails for the stock? Looks a delicious recipe!

I love this type of cooking. Simple food elevated with good technique. I do wonder though, what is the point of the 1/4 inch dice for the vegetables for the stock if you're just gonna strain it anyway?
Smaller the cut the faster you will remove the flavors, since this is a fast broth, smaller the better.
