I found the fastest way to do Chawanmushi is by steaming them in a shallow pressure cooker (I use the Kuhn-Rikon braiser) for 3 minutes at 7.5 PSI on top of the trivet with 2 cups of water, then doing a fast release. I use this technique routinely when I have guests and works every time. I use a Japanese Chawanmushi set I got from Amazon.
No Dungeness crab in my part of the country. Any suggestions? Blue crabs or Lobster, maybe? Would you use them as a gm for gm substitution? Thx
Either can swap out ok, even crawfish. The closest flavor to Dungeness would be king or snow crab tho.
Amazing! Had to use a previously cooked and frozen Dungeness crab.....still a great meal! We love Chawanmushi and the recipe making the dashi and the roasted crab shell may be my go to recipe from now on. Thanks!
Can I move the chawanmushi to a bowl and add the crab salad on top? I don't want to serve it to my guests in the jars
