This was awesome and super easy. Most of the time when I grill chicken with a thick marinade the skin comes out flabby and unrendered; this chicken skin was nicely charred and paper thin.

This was so good. I didn't do the whole chicken grilling, but used the marinade recipe for boneless thighs. I have teenagers so I like to prepare things in batches to it will be easier for a weeknight meal. Divided the marinate into 2 ziplock bags and put into fridge overnight. Next day, put on sheet tray lined with parchment and put in freezer. After that put in freezer bags (I vac seal them) then into freezer. Thaw and throw on grill and comes out amazing! Working on making the marinade in larger batches so I will have more on hand. Thanks!

Has anybody tried substituting rocoto paste for the achiote and chile guajillo? Thoughts on results?
I want to try this recipe but only have a propane gas grill. Any suggestions for simulating a charcoal grill while cooking?
