Great video. Is this recipe suitable for apple strudel? I’ve made strudel, which calls for a larger pane of dough, but your recipe is more manageable, and I’m thinking that slightly overlapping the panes will achieve the same result—a perfect strudel. Your thoughts?
Agreed. This is what I would use for strudel going forward, regardless of traditions. Making things work for you rather than against.

This is a killer recipe. I have a hunch that ascorbic acid could work even better (and at much lower concentrations) than vinegar, can you confirm?

Apples to apples. May be very difficult to tell any difference in acid choice.
