You can cut the sugar even more if you find it too sweet. The muffins will lose some tenderness. You can also omit sugar when whipping whites if you want to cut more sugar.
Would it work with only the 20g sugar for the meringue if I wanted to make a really savory muffin? I tried with your recommended half sugar but it is still far too sweet for me. Thank you

Just buy yours at the grocery store then.
Measure for measure is what those producers advertise. In theory it will work. Red corn has the most gluten like properties and could be a direct swap for the wheat flour.

It is an Ultimate recipe. And after eating so many of them, too many actually, I would attest that they are worth the fuss and something special.
Vanilla bean is blended with corn mix, no need to remove it.
Too fussy a recipe. It's muffins.
These are exciting to me but it isn't clear, is the vanilla bean blended in, or removed from the cooked corn mixture? I don't see mention either way in the steps.
