haven't made but interested - I've never seen a rest period for a muffin - I was under impression once liquid combined with dry/the baking powder, rising action started and must hit heat immediately. What does rest period give muffin and how does it still rise?
Hello gail, while the reaction will start with baking powder, there is still power left to make muffins rise. There is also plenty of reaction happening from the baking soda and acids as well. The rest period will allow flour to hydrate more giving the muffins a better shape and rise when baking. You can chill batter overnight with stellar results.

These might be the best muffins I’ve ever made and eaten. Lovely exterior, super soft interior, actually tastes like lemon and poppy seed, and just enough sweetness from the glaze.
I LOVE HEARING THAT! Chef Matthew and I both love lemon poppy seed and the conversation began with how a lot of folks do not know that poppy seeds actually have flavor. This kind of got pushed to the max when we wanted so much poppy that it almost went black, but we stopped at silver:)
Pretty annoying that the muffin liners your recommend do not fit in the muffin pan you recommend. Seems like a pretty silly oversight. Delicious recipe though Matthew.

Me too! I also use unbleached flour in the studio and all recipes are developed with unbleached flour. Please use what you are comfortable with. Bleached flour is the one that may affect flavor but will perform the same.
