Given that the pectin in apple cider is the gelling agent... can we substitute a more easily available apple liquid (like apple juice) and just add some sachets of pectin to it?
I would say it is worth a try if you can not get your hands on cider. But we did not personally try it out
This recipe was poorly timed as far as posting of needing raw apple cider, like you mentioned. I have not tried it, but starting tomorrow some good apples are a buck a pound and I am going to give it a try with my Breville juicer, which makes something really close to cider with noticeable pectin content.

Can you do this without fresh raw cider? Yes! I finally got around to trying it. I have a Breville Juice Fountain Elite; 12 lbs of Honeycrisp and Envy later, I ended up with what seems as close to cider as you can get.
I weighed it before reducing, and around half, give or take a few grams, it was pretty much perfect consistency. Grab those apples, use your juicer, and make this honey! I am in love with it. And perfect for little gifts.
This is it straight off the stove. Very viscous.
Completely cooled in a 70 degree kitchen.
