I'm super happy with all the muffin recipes that have been posted - they all give some great options to get the day started. Really looking forward to putting these to use, and would love if there is a vegan version of the master recipe in the future to use, I'd put it to good use...
Exciting. The drop cookies are a regular in our house so nice to see some accessible muffin recipes. The pumpkin muffin batter is resting now.
Especially for those of us with quirky ovens, what internal temperature should these perfect muffins be when pulling them out?
Baked goods are done baking when internal temperature reaches at least 185°F and up to 205°F. I have never temped a muffin and always rely on the spring test as my end all, be all. But I do encourage to bake items until they are done and not by time because every situation is different. When you poke the muffin with the probe it will also come out clean for the most part. Sometimes temperature is a false read and you want to rely on all the tricks like a clean toothpick and some spring back when pushed.
_H_ow long would you bake these if they were regular size? I don’t have a jumbo sized pan
For regular sized muffins it will be 425°F for 5 minutes, then 325°F until they are done, which will be around 25 minutes, but check them at around 18 minutes. As a chef and baker giving times and temperatures are more guidelines that may change with pan selection, oven type or size and operation, hot spots, etc. Always bake goods until they are done and don't go off of the timer as your last resort. A timer is a helper, an oven is tool, you are the baker.

I Just Made These, there fire!!!!. I added Like 700g of fresh blueberrys, this recipe is a banger 💥🫶🏻. My new Bueberry muffin recipe, bakery quality but even better. 🫡🫡🫡. But mine we're done backing in 25 minutes.
