Nice technique! I cooked 12 scallops in one big pan and it worked great. I like that the latter half of the cook is chill so I could focus on getting the remaining components ready. Definitely works best for U10 scallops, some of the smaller ones got a bit overcooked.
Enjoyed this in the control freak. First time I was able to get such a beautiful brown on fresh Digby scallops.
