I have been smoking ribs for decades but never with just a salt and pepper rub, Texas style. I trimmed the ribs as shown in the video and rubbed with salt and pepper. I cooked them on a kamado-style grill for around 3 hours before using my standard BBQ sauce cut with extra cider vinegar as Joe suggests. I wrapped them in foil and finished them for about 40 minutes. They were great. Tender with plenty of chew. I think I'll stick to just the salt and pepper rub going forward as I do with my briskets. Thanks to Joe for the great series.
