I can understand using the Totole as a seasoning or umami booster, but it seems sacrilegious to recommend it as a chicken stock substitute given that it is devoid of anything derived from a chicken.
The starting percentage I like to use for giving stock "body" with Knorr gelatin is 2% to the total weight. I also use this percentage for broths made with concentrates.
Hey Tom! I totally hear where you're coming from. Ingredient labels can be very ambiguous, especially in the states. I was curious if it's actually devoid of anything derived from chicken so I went to their site. Not going to lie their story/mission inspires me to start my own bouillon company. But lets set my hopes and dreams aside.
On the Xian Q&A page they note: "6. Is granulated chicken bouillon really made from chicken?

Thanks for the feedback, Nicholas! Call me skeptical, but that Q&A is for granulated chicken bouillon. Their site shows that they sell granulated chicken bouillon as well as chicken powder seasoning and granulated chicken flavor soup base mix (which apparently is only sold outside China). Both the granulated chicken bouillon and chicken powder seasoning discuss their use of chickens in their production, but the granulated chicken flavor soup base mix does not. I’m thinking the ingredient list is accurate for the chicken “flavor” soup base mix.
