Another killer recipe! I made two batches-- the first one using plantains before learning of a client's banana allergy. For the second batch, I substituted sweet potato in lieu of the plantain and it came out amazing! Thanks again Jonathan!

Is there any reasonable substitution for the lard? I'd like to do a kosher version.
You might try Crisco - I've used it successfully for similar things
I think this would be great with duck fat. You can also just use any neutral oil like peanut or vegetable.
