Hi! If I’m using the breville control freak for the pan-fry method what temp and intensity should I be using for the frying and steaming portions?

In our recipes, like the Pork, Shrimp, and Cabbage Dumplings, we include instructions for cooking with the Control Freak induction burners. Briefly: f 340 for the initial and final fries, f 300 for the steaming. Intensity is three flames.
If I have 00 flour lying around, would you recommend I use that over your 70/30 blend?

Yes, 00 works really well and if you have it on hand, go for it. The resulting texture is slightly chewier than the 70/30 blend, but also smoother in appearance and on the palate due to its fine milling size.
