Completely over the top and awesome recipe! I assume you can modify for a more traditional presentation with the same ingredients? Just assemble in a cake pan with the cream, soaked sponge, and chocolate on top?

Hello. You can use it as well to spray neutral glaze on entremets. I bought one like two months ago, haven’t used it yet because I’m still figuring out how to clean it? Any tips ?
Haha good eye Keith. After taking the first portion out of the tin I dipped a metal spatula into hot water (wiped dry) and cut out it's shape carefully before removing.
Ah great question Hussein. Took me a few rounds to find a method that worked for me. Here are the steps I go through. 1. First remove any excess chocolate in the "bucket" and reserve for later use before it sets up. If it has solidified just microwave and transfer.
2. Soak/wash "bucket", intake tube and the two pieces that unscrew from the end of the gun in hot water. (now you're just left with the dirty gun)
3. Bring about 2 quarts of water to a boil and slowly pour the water into where the intake tube was attached upside down. You can also use a wood skewer to remove any chunks of chocolate that are clogging it. Continue pouring water into the intake tube until it comes out the end of the gun. Repeat this if needed until the water runs clean.

Hey Mihail. I don't want to freak anyone out but I don't really worry about disinfecting it. To truly sanitize something is a lot more difficult than most people think. The cocoa butter and dark chocolate are already shelf stable so with keeping that in mind I just try and work clean. Here are the steps I use to clean it. 1. First remove any excess chocolate in the "bucket" and reserve for later use before it sets up. If it has solidified just microwave and transfer.
2. Soak/wash "bucket", intake tube and the two pieces that unscrew from the end of the gun in hot water. You can run the bucket through the dish washer but I recommend hand washing the smaller parts for more thorough cleaning.
(now you're just left with the dirty gun)
3. Bring about 2 quarts of water to a boil and slowly pour the water into where the intake tube was attached upside down. Repeat this if needed until the water runs clean. If you want to more thoroughly clean the inside of the gun you can fill the bucket with hot water and soap/disinfectant and spray.
4. After cleaning make sure to let it fully air dry before packing the gun up for later use.
Thanks Nick, FWIW, After I clean the bucket and pieces from the end of the gun, I'll typically run 50% boiling water:vinegar and spray it out (usually outside). Took the idea from your?chefsteps ideas on cleaning the siphons w/ a single charger.
Thank you very much. Another tip if one doesn’t want to use alot of chocolate, use a small mason jar inside of the « bucket ».
Is there a way to make this without the wine, can I just use more espresso in the syrup?
Ended up replacing all the wine with more espresso, it ended up being a bit bitter but overall pretty good.

Yea it kinda depends at the end of the day how much you like that bitter roasted coffee flavor. If you REALLY love it there are some great freeze instant coffees on the market. Verve's decaf has a great fruity acidic flavor that isn't very bitter, that might be an option next time. Maybe even a 4:1 (water:sugar) simple syrup infused with some spices.
