I only have slicing attachments at 1mm and 2mm. Is it better to err on the side of thinner or thicker for this?
I would err on the slightly thicker side if I had to pick between the two.
Depending on how the blade is designed you might notice the pressure you put on the bread in the food processor will get you a different size. For example if you're using a 1mm blade attachment if you press firmly on the bread as it's spinning you will end up with 2-3mm slices. So before you go full send on all your bread, start and stop, adjust the amount of pressure you are applying to find the amount that works.
