So excited to make all these dishes! A suggestion for future content: Hummus is pretty played out at this point (Kenji's The Food Lab or Zahav) but hummus flavorings and toppings are not. I'd love to see a collection of twists, e.g. a few months ago I had some hummus with a red pepper "XO" sauce I still dream about.

Hi, In Lebanon the Falafel sandwich usually dressed with the classic tahini sauce(without the veggies) and some turnip pickles and some chopped parsley, the Hummus as an add on is not in the original recipe and it will change the taste of the classic falafel sandwich. Even it is a good variation but I would encourage firstly to try the classic version of the Falafel sandwich before adding the Hummus or the veggies to understand the original taste.
But all are good in the end. enjoy.
