This sounds great! If one has a combi oven, how would the cooking process change (% steam used, time, etc)? I assume you wouldn't need the sheet pan or water in that case.
Is there any reason not to add inclusions like sauteed mushrooms or spinach to the egg mixture when it is added to the cake pan for baking. I am assuming the inclusions have been cooked to the point that they will not release liquid into the egg mixture.
Would using a Vacuum chamber reduce the rest time?
Dare I ask…y’all have an egg substitute?
Any recommendations for replacing the cream with something healthier? Anyone try cottage cheese like sous vide egg bites?
One note for people baking this in their breville oven straight from the fridge. It’ll take 30 mins cook time from fridge to oven.

Hahaha! Been chuckling at this all morning
so i actually have a method that didn't require me to rest the eggs for bubbles and i just put it in my vitamix blender on the lowest setting and i saw nearly zero bubbles formed. Super silky custardy eggs awesome recipe!

In the spirit of meal prep, I made this using straight wall ramekins instead of the 8x8 baking pan. It let me skip past having to trim up the patties, but you don't get the nice square shape shown.
I still cooked them at 300F, but instead of just having a tray of water, I placed the ramekins into the tray, as a water bath you'd usually do with custards.
End result was great, once again a fantastic recipe.
Would silicone molds work for the patties. Like a 4" round?
