As soon as I saw this, I had to try it, and it was so good!
I did the roux-based sauce and used store bought potato buns, that makes it a quick, easy dinner (took ~ half hour to make). I’m sure homemade buns and melting salt version of sauce takes this to the next level, so I’ll have to make it again.
I used a 10inch carbon steel pan to serve, it was a good size, maybe a tad small (would have been easier to grab if they were more spread out). It does holds the heat well, warm for the entire meal but not so hot it burns.

Quick question about the pan. Is that one of the Darto Paella pans? If so, is it the n.30 or n.35?
Recipe looks great. And thanks for showing the temps for Smash Burgers using a Control Freak Home. I've kind of struggled getting them right the couple of times I've used my CFH to make burgers. The video showing how the temp falls was really helpful.
