Is fire preferred over induction (Breville CF) to make the omelet?

Yes. Induction doesn't deliver enough heat to the sides of the pan for this omelet. And there is a lot of moving and lifting of the pan off-heat; with induction this drops the surface temp of the pan too much to get a great result.
You got this! Give it a try. The best thing: even less than perfect omelets result in delicious scrambled eggs. It's the culinary equivalent of the Mitch Hedberg joke that escalators never break, they just become stairs... sorry for the convenience.
When I saw the video and equipment, my first thought was "did Breville sell chefsteps?!?" Seriously. I bet someone from marketing is going to suggest a revamp. Whisk the eggs using a super-q, ioT-connected, Breville immersion blender, perhaps.
Since this recipe can be made by us poors, I will have to give it a try even though soft-scrambled eggs aren't my usual jam.
Thanks for the recipe pointing me to the movie Tampopo. I had to watch that before I made the omelette and now I have so many questions. Felliniesque. Instead of omurice I went with "omuhash". Yes, canned, but don't judge me. The instructions were clear and I watched the full video on Youtube twice before trying the recipe. I like smaller omelettes so I used 2 eggs and the results are shown below. The flip is similar to the technique in making a tamagoyaki rolled omelette and the finished texture is similar to the tornado omelette. I am adding photos of my earlier attempts at those as well. Thanks for the clear instructions and videos that make this not the hardest omelette to make.
