Thank you Chefs! How bad would it be to use full fat milk powder?
What perfect timing. After moving away from the US this time of year always leaves a void without apple cider doughnuts.
Due to a severe allergy I must make a dairy free version. I can sort most of the ingredients, what about the powdered milk though, what is a good functional replacement for this?

Andrew I can't imagine it would made a large difference. I would think it could be subbed in 1:1.
Hey good morning Jeff! I would substitute in 10 g of flour in place of the powdered milk.
What dairy free ingredients are you planning to substitute? I would like to take a look at the ingredient breakdown. Might help me give you better advice on the sub.
Thanks for the reply. I will sub the sour cream for Oatly creme fraiche and butter for plant based Flora (plant based w/ 79% fat).
I hate to be this person but have you tried this recipe with gluten free flour?
Hey Josh. We haven't tried a gluten free flour version yet but we should give it a try. Just curious do you like using Cup 4 Cup or Bobs Red Mill (GF) all-purpose flour? It's been a while since I've used them and wondering if I should start there.
My go to is King Arthur measure for measure, it works pretty well for me with cake, muffin and brownie situations. Iād be tempted to try some oat flour too.
Great recipe (now my favorite ever as well!) but wondering with this much cake flour and different brands having protein percentages ranging from 7-10% what cake flour protein percentage were you using in the recipe? I suppose the same question applies to the bread flour. This 50/50 blend has a significant range of a final protein content of under 10 to over 11% and would affect the way they cook out. Understanding what your recipe was designed for as a final protein percent (this is what I would really want to know) would allow me to adjust accordingly if I were to prefer a slightly different final texture or spread for preference. Appreciate all that you do!
