There are no contradictory statements. Option 2 says up to 1 hr leave it out at room temp. Option 3 says for more than an hour, wrap tightly and put in the frig.
I stand corrected. Below under "pick your protein" beef steak, author directly contradicts himself stating the steak can hold overnight UNCOVERED in frig.
