can calcium lactate or gluconate be used for a setting bath?
hi!! I would like to know what exactly is the flavorful liquid? Is it juice or sauce or something else? and which one is the prefered method sphere magic bath or alginate bath?
the flavorful liquid is whatever liquid you choose to make into spheres. and the difference in the sphere magic and the sodium alginate is the sphere magic is already hydrated so it is a quicker process than just sodium aginate which will take a little longer to hydrate.
Any help with butter spheres as any recipe I've found all have fallen apart in the circulator bath
can brewer's calcium chloride pellets be used in this application?
Calcium lactate can definitely be used. It just makes a softer coating than the chloride. I've not tried the gluconate.
