Nice... can you elaborate on the carbonated watermelon?
I am answering this from the Disqus page so I am not sure what the headlining topic is but I'll try to answer. Slice water melon so it fits into a whipping siphon and charge as usual for carbonating. Or slice cubes, or even large wedges of melon and place them into a styrofoam chest with a couple cups of dry ice. Use one or 2 large pieces and not powder as the powder or crumbs will sublimate quickly. Leave in chest for 24 hours, the eat.

Instead of infuse the rum in a sous vide. Can't you just infuse it in a whipping siphon?
