Great video! Can I use a mandolin to slice the tendons? or are there other alternatives to the meat slicer?
alternatively you can sous vide at 90C for 12 hours, press them in a 1/3 pan until firm.. then proceed with the shaving on the slicer

Bonus: Create Your Own Gelatin Sheet.. does it mean we can do the same to the regular commercial gelatin sheets we use for foams; or they have components adhering to that?
