gribiche is such an underused accompaniment. IMHO.
Absolutely great and extremely versatile. I used xanthan gum (way less than 25g) instead of the Ultra-tex 3 as this was all I had. Worked fine.
Hi Jens. How much xanthan gum did you used to replace the ultra-tex 3?
When you say 1 recipe of mayo - do you mean to add 500 of that mayo?
