Try adding some diced pickled jalapenos instead of cornichons. It's delicious. We also add worcestershire and a smidge of homemade kecup
Any thoughts/tips on buying raw meat? A little concerned with pasteurization.

I only use local butchers when doing a raw preparation. Always ask questions when dealing with butchers and fish mongers. If they do not have time to discuss the freshness of their product, I do not buy from them. If you do not have a local butcher and have to use a large chain, ask them to cut you a piece of center cut filet. If they refuse, walk away.
This was fantastic. I used tenderloin but next time I want to try the eye of round.
