I found the Raddichio way too bitter. Is there something I can replace it with?
Put it into a bowl full of salt overnight, half covered. It also removes bitterness from chickory. The salt can be used multiple times.
I quartered the Radicchio in a bowl of ice water for about 30 minutes. It reduced the bitterness quite a bit and made it much more enjoyable for me.

Can I quick boil radicchio and then cool on ice instead of microwaving?
If you want you. It'll probably mess with the texture, taste, and you'll lose some nutrients, but if it's your thing, go for it.
Perhaps just season with more salt.
Loved this dish. Subbed the Hazelnuts with Pecans but overall loved the tasted of all the different flavors.
I loved the salad the very first time I made it. The second time I used a radicchio that was not as firm as the one from the first time. The 45 seconds proved to be too long and I ended up with a very limp salad. Just a note to remind all to time the microwave according to the condition of the Radicchio. A winner.
Is there any other way to prapare/cook the radicchio without using the microwave (and preferablywithout boiling it)? Perhaps toasting it on the stove?
Cut in quarters (leaving core intact to hold it together), brush with olive oil and s/p and grill over a hot flame, charring each side for a couple minutes.
I would not boil it. Cut in quarters and grill it. Great flavor, especially with a little char!
This is a killer salad! Simple, unexpected and elegant. Everyone I serve this to is knocked off their socks!
I usually microwave 2 quarters at the same time for 1:30 min. Shaving the cheese is easier if you also chilled the cheese grater and grate into a cold dish before sprinkling over the salad.
Best to serve it on a lighter colored dish, so the beautiful chive oil is highlighed.
My radicchio turned brown after microwaving 50 sec. Next time I will grill it.
