I used texturas agar instead of gellan - works great. I thought i messed up when mid-process i realized i didnt have gellan in the house, but it works perfect. Can someone explain the differences? Or what i have just done....? :-)
Is the texture vastly different if I don't use the hexametaphosphate? I can't get my hands on it around here, unfortunately...

Hi there, where can I get more information on sodium citrate and sodium hexametaphosphate? Would you normally use both together and in what ratios? Thanks
Pretty salty taste .. can I omit the salt without screwing up the texture?
I made a succesful attempt on using agar! I brought it to temperature with milk and yogurt and used 9g of agar to 200/300 milk/yogurt, creating a very thick, ballistic-like gel. When blending, I poured in some buttermilk to get it running and for taste and texture.
I can't seem to find sodium hexametaphosphate anywhere in the UK. At least not in affordable amounts. Anyone know who might have it?
SHMP tastes less salty than sodium citrate... might be able to change the balance between the two. You definitely can't omit them completely, though.
