Great recipe and adaptation of the classic sauce. I also tried a twist on this by adding roasted green and poblano peppers, which added some heat and color while maintaining the fairly delicate nature of the sauce. Thanks for the guide!
Why not just use AgarAgar? why have a different gelling agent for all these different fluid gels if they are all supposed to be "tasteless" ??
Why did you guys not use a full-on (Vitamix or Waring) blender and chose to use a stick blender instead? Wouldn't that have ground the onions finer and allowed you to extract more from cooked mixture?
Ive just made this, using agar instead of gellan, & the flavour & texture are spot on, but the appearance is a bit odd; kind of grainy-looking, although it's completely smooth (it went through a sieve at the end). Any thoughts?
I made this with agar too but I had no problems with the texture. Mine came out super smooth like a mayonnaise type texture. I poured it through my mine mesh sieve to remove onion solids, again after reheating with agar and salt, and then after blending the set gel. I also used my chamber vac to remove air.

Hi, any suggestion on which Vacuum Chamber i should use ?
Im assuming the vitamix would whip too much air into the cream. Thats why they blend on a low setting as well
we use a vita mix. we vacuum out the excess are whipped in during shearing.
Haven't had any luck getting this gel to set before blending. I've tried increasing to 1.1%, boiling to hydrate, chilling on ice, chilling in fridge, and adding xanthan gum. No matter what the gel does not set firm and just comes out like onion cream. Too thin for anything good. Any advice? Thanks in advance.
Are you sheering in the blender to hydrate? Bringing to the boil in the blender has always been my success. Sounds to me like the gellan is not getting to the full boil. Sometimes this can happen if just boiling in a pot. It is a false read of sorts. You have a vita prep or other high speed blender?
