No, stick to sucrose (table sugar). In terms of sweetness per gram, fructose > sucrose > glucose.
How can I "sugar" the strawberries to draw out the juice, and how much? Just add a handful of sugar indiscriminately? No measurements? Doesn't that add sweetness? How much juice will that produce? Let it sit for how long to draw out juice? Your recipe is incomplete in that section. Help!!

What are your thoughts on malic acid vs citric acid? Would strained lemon juice be an alternative?
Any acid works here. Malic acid and fumaric acid are chefs favorites with citric acid being the most available after lemon juice.
