Go to the Recipe: Compressed Strawberries
is it possible to do this with an isi siphon?
No, you need to pull a vacuum rather than add pressure. But one of our members has been working on an inexpensive way to do this at home. See this thread in our forum: http://forum.chefsteps.com/dis...
Do you think a quick marinating attachment for a vacuum sealer would do the trick? something like this: http://www.amazon.com/FoodSave...

might be better than nothing but not worth the clean up in my opinion. They do not generate much vacuum.

If not served straight away after vaccuming ,do you store the strawberries inside the bag with juice or out of the bag and then chilled?
When you write links in the discussion part, they're not fully showed, so impossible to click on them , or even to copy/paste... Pitty
I've compressed strawberries with moscato as well to infuse flavor. It works well with this dish.
.
I cannot see the link...
Just buy good strawberries. No need to infuse them with anything, and for sure not with sugar.
Considering good strawberries are only available for a short time each year, being able to make out-of-season grocery store strawberries taste better than June strawberries is amazing!
Just go out to eat. No need to learn to cook anything.
