If i were to use the "sugar method" to extract the strawberry broth. Would i exclude the sugar in this recipe?

If I may ask, what is the rational of releasing the syphon after the first cartridge has been loaded?
I'm not positive, but i would think the reason for this would be to create an internal vacuum and create that honeycomb effect? I am just guessing. I was asking myself this too. without the pressure of the co2 i dunno if its possible to bleed the canister. I wish someone would answer this too lol. I'm really curious to know.
You use heavy cream for this but could I skip the sugar and just use a vanilla ice cream base? I might give it a go at work next week as we will have some spare Liquid N2 and having a centrifuge that pulls 50,000g should make the strawberry broth pretty easy
It's to clear the siphon completely of air. If you don't do this, then when you add the CO2 for carbonation, you end up carbonating the air in the siphon, rather than the liquid.
Can I use only yogurt for this recipe?
Could I use a heavy cream replacement like whip topping or some kind of creamer (non dairy) to make it Kosher?
