Hi Seema! This recipe is designed for gelatin at this point and would not work well with guar gum as a replacement. We actually haven't experimented with using guar gum for this but wanted to give some history and context. This would be a great question to ask on our forum though!

I used the gummy recipe and had great success! However, I would like to know how to give the gummies a wax coating for a shiny finish. Will coating them with wax make them last longer? Also, would like to know more about making sour gummy outer coating with a fumaric acid sugar mix. Does malic acid work or will it cause oozing?
Hi J. Did ever find out how to coat your gummies with a wax coating? I believe this would help for shelf life by acting as a preservative. Packaging can be tricky bc they become sticky in which a wax coating would be extremely helpful. I have tried making sour gummy candy by coating in citric acid and sugar which worked for me. I only ever tried store bought sugar but the correct type i believe is sanding sugar. Lastly, if i am correct, citric acid if added at the end of the cooking process acts as a preservative. Hope this helped, and if you happened to figure out a way for candy coating i would love to hear your response!

Can you substitute pectin in place of gelatin 1:1 to get a vegan friendly version? For instance a gummy. I understand it may not be as chewy but 1:1, will the firm up enough?

Hi Sandy, You can change the settings from grams to ounces in any of our recipes. Click on the “Edit Scale & Units” button and you can change the settings and scale a recipe (also works by scaling an ingredient). Hope that’s helpful.
If ever possible can we get a vegan gummy recipe?? Ive tried using gum acacia as well as agar agar to make gummy bears and they just dont have a pleasant texture. I cant find any help anywhere else and would love to see a professional approach! Ive read about usinf tapioca starch or bees wax before too but no actualt recipes. Any ideas where to look?

Is it possible to substitute stevia and or powdered (or granular) monkfruit with ERYTHRITOL (or both), for the fructose and other sugars in the recipe? I've been trying to make a SUGAR FREE gummy bear recipe for a while and have had some success but mainly problems with not having the thick "chewy" consistentsy of other gummy bears (including very expensive sugar free ones I've purchased.) Also, BTW, I've used several variations in the recipe including the use of acacia fiber, carnauba wax, inulin powder (chickory root), xantham gum, and of course, agar agar combo with gelatin, as well as a small amount of malic acid and coconut oil, which helps with sticking. My main issue is getting the same thick and chewy consistency as manufactured gummies withOUT the sugar.
What is a good substitute for gum arabic? My recipe for starbursts calls for gum arabic but i can't seem to find in nz. Thank you

The starch section says that amylopectin does not gel. I am sure that amylopectin gels make a more viscous gel (This is opposed to On Food and Cooking, but I have tested this).
