what does refreezing it with liquid nitrogen do that just freezing it until solid doesn't? If I blend it straight from the freezer would it thaw too quickly?
Yes. The freezer will not provide it with enough energy to become as brittle as you need it to be nor will it provide enough energy to keep it cold as it heats up through processing and handling.

You could do the powder this way, but we developed the lemon granita recipe as a fairly traditional recipe first, so this technique is really just a modification of an existing recipe.
For how ow long you can keep it in the frizzer?
Can this be done with dry ice instead of liquid nitrogen?
Will a blast chiller freeze it enough to avoid liquid nitrogen?
