P.S. I am going to use store bought mayo. Any easy things I could do to it to doctor it to make it somewhat closer to the ChefSteps mayo?
The amount of effort it takes to improve store bought mayo you might as well use to make home made mayo Even a really simple one with just egg yolks, oil and seasoning is better than store bought (provided you have good quality eggs and oil).
Kewpie is the closest mayo on the market to ChefSteps mayo, purchase that one if you can.

I made this last night for Marc Feifel. Marc Feifel traditionally does not enjoy potato salad but loved this. Also, I used party fingerlings and turned my salad a lovely shade of cherry blossom to compliment the plate. Thank you for the suggestion Nick!
Also works well with a Vinaigrette (Pommes de Terres Lyonnaises): Salt, Pepper, 1-2 tsp of Dijon Mustard (real one, not sweet), 2 tsp of Wine Vinegar, 2-3 Tsp of oil, 1 cup of hot water, shallots is plus. The idea is to that the warm water will be absorbed by the potatoes, so the Vinaigrette will get into them as well. The hot water trick was from my Grand Mother.
Mayo is indeed easy to make. But store bought mayo really doesn't have to bring down a dish. An easy way to doctor up store bought dressings/condiments is to add fresh herbs. Some dill or chevil can really brighten up a salad so I've discovered

Just a thought, any reason why you dont use your own recipe for sous vide potatoes, to use in the salad? Just wondering if its a coincidence or if there a reason why you want to use regular poached potatoes?
This way it takes an hour to prepare the potato salad. So you could do it while the steak being cooked. Doing two dishes by sous vide makes it even more time consuming. Unless you have two sous vide machines.
I inherited some little red potatoes so this recipe intrigued me. I used homemade mustard (amazingly easy recipe on Snapguide) & had already used vinegar in that so just used some of the Vermentino (white wine grape) wine I was drinking while preparing dinner. I used Miracle Whip instead of mayo (that's how I roll) & the results were phenomenal! Thank you for the inspiration!
