When specific brands are recommended in the ingredient list, can you elaborate some place as to why a specific brand makes a difference in some cases, but not all?

From my personal experience, when a recipe suggests a certain brand of common ingredient (such as a mustard or ketchup) they are exploiting some unique flavor inherent to that brand's product. Then if a recipe does not state a specific brand I see it as an invitation to experiment for yourself. I could be way off though, who knows haha
Go buy 3 different brands of Ketchup.... They wont taste the same. Fancy Ketchup is the most nastiest ketchup ever!

I can't believe that "Heinz ketchup" is an acceptable ingredient. High Fructose GMO crap.
does not sound very sweet... molasses is just as much bitter as it is sweet so seems odd me to although i will try it

Not that great at first taste, the quantity of whiskey is very high for the proportion and the sugar is very low. Something is missing, they must have forgot something.
I'm smoking the beef short ribs Tuesday, we'll see if it work better once mixed with the smoke taste.

I added La Chinata smoked paprika to give a smoky taste and dark brown sugar to increase its sweetness but this is a function of taste...
Instead of Heinz and tomato paste, I used the same amount of roasted red peppers and a little habanero. That added a nice "wang" to it.

Not in Canada!! Only sugar. Same with soft drinks.
Use Hunts natural ketchup instead. No tomato paste, no celery seed, no molasses, Use brown sugar and honey for sweetness to ur liking.

Blah! I just want to have it, not make it. Although, as the Heinz ketchup in my fridge is properly bottled and what not, and my mushroom ketchup that I made last week isn't, I'm probably subbing that in for the Heinz. I just want to take a bath in their sauce!
As Public Enemy once said, don't believe the hype. Sugar derived from corn is no less healthful than sugar derived from sugar cane, beets, etc. HFCS and regular ole sugar are both pretty much the same thing.

I'm a multi-generational Texan and I have never had Texas BBQ with whiskey in the sauce. Beer, yes. Whiskey, no. Also, there's no "redneck" mustard (French's yellow) in your recipe, which is a staple here. That should be used instead of the distilled vinegar. Equal amounts of dark brown sugar and molasses should be in the sauce, as well. We do not use celery seed or black pepper in our sauce, either. If anything, we'd use jalepenos and onions. With that said, I'm going make BBQ sauce with the mushroom ketchup I just made, too. So, it won't be traditional either, but I bet it'll be wonderful.

Super excited about the updates we've made to this recipe! Reading your comments made us think we should taste it as a team again and we agreed, it needed to be modified. We feel confident you will enjoy it now, and if you made it before and weren't happy, I hope you try it again, and let us know what you think.
