I've tried this out with some store-bought apple juice instead of making fresh pectin-free juice, and what I'm finding is that the juice comes out very foamy, rather than fizzy - I can quickly fill a glass with "head" that quickly breaks down leaving only a mouthful of juice in the bottom of the glass. The juice definitely has that slightly carbonated taste to it, but it's not noticeably fizzy.Is this just a factor of the juice I'm using, or does it sound like I'm doing something wrong with the syphon?

Well, you probably won't make that mistake again ;-) Been there and done variations on this myself (now how exactly does one clean an explosion of aerated chocolate off a 20 foot ceiling?)
Can you substitute the phosphoric acid with citric acid?
You can, but the flavor will be different.
What kind of Soda Siphon do you use? Since you mentioned the soda tradition from the early 1900's, why not use an original 1920's soda siphon ?

I only have a 0.5 liter whipping siphon. So im unsure of how to handle the amount of gas charges needed, to get the same results.
What do you recommend i do, when i want to make carbonated drinks with my siphon?

I also only have a 0.5l siphon. Initially when carbonating, I found that using 3 canisters (including the initial one to clear the chamber) was disastrous; the third charge would spit dry ice back out at me, plus when clearing the gas for the second time, the drink would shoot out. Now I just use one charge to clear & one to carbonate, & it works perfectly. As long as you shake the shit out of it to melt the ice, the drink is very sparkly.
this looks delicious however....very expensive. 3 charges of co2 per liter seems like a lot. But I really appreciate the background on phosphoric acid, the options of making delectable sodas from scratch. thanks
I did the Strawberry Soda recipe in a 0.5L iSi Whip, which fills 2 large martini glasses.
After making the puree in a Vitamix (no added water), I "centrifuged" it in my WASHING MACHINE. Yes I did!
I bought four centrifuge bottles on Amazon (despite working in research labs for years, I never realized how expensive these things are):

Used two large bath towels on either side of the washing machine to wrap the bottles and hold them in a vertical position (didn't bother to wet the towels).
Be sure to check where to set the dial to only spin, since you don't want the last notch on the rinse cycle to dump water on your towels.
I ran the spin cycle (6 min) 3-4 times before removing the bottles.
How did it work? Reasonably well, although the "pellet" (what we scientist-types call the heavy material that collects in the bottom and on the sides of a centrifuge bottle) was very soft and had a tendency to fall out when decanting the "supernatant" (decant through a kitchen sieve). No surprise that a washing machine doesn't hit the g-force of a real centrifuge. But it's still a useful trick and if you use a Chemex filter after (will take several hours), it is less likely to get clogged.
Hard to measure such a small amount of phosphoric acid, and I'm not really sure how it changed the taste. Need to do a side-by-side.
[ModernistPantry said they were sold out of 500 mL size of phosphoric acid and only had the 1 L size, but when it arrived in the mail, it was two 500 mL bottles. LOL :-(( ]
Umm, fyi the brand of phosphoric acid that you have hyperlinked to on Amazon, provides a rather inconspicuous warning that the product is NOT food safe.
