Anyone else have any ideas for coffee based dry rubs? I love the combination of fresh ground beans and raw cacao powder.
Would this work as a rub on sous vided chicken breasts? Put it on before or after cooking?
try using coffee, juniper, cacao nibs, coriander, salt, black pepper as a rub for beef and venison. Sorry, I don't have a specific ratio...
granulated honey/jaggery etc add a nice dimension in lieu of other sources of sweetness, depending on your usage...smoking the sugar or salt is also a nice addition
I catered a wedding and grilled whole sirloins with a rub made out of ground coffee, coriander, cumin (careful, not too much), smoked paprika, black pepper and a touch of cayenne. I drizzled a little rosmary-garilic-olive oil over the top and everyone raved about it! It's a keeper.
Here's a recipe I used for a recent cookout with beef tenderloin and whole sirloins taiset great
1/4 cup ancho chili powder
1/8 cup cacao nibs
1/4 cup finely ground espresso
2 tablespoons Spanish paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon ground coriander
1 tablespoon dried oregano
2 teaspoons ground ginger
2 teaspoons chili de arbol powder
Salt and coarsely ground black pepper to taiste
