Question on biter, sour and acidity.
I know there is a difference between them but could you elaborate on this or mabe a blog post on tasting language?
My guess is that acid is like vinegar and bitter and sour are like citruses. But when you ass salt to something like fresh lemon juice the intencity drops. But is that tast dropping sour, bitter or both? Can adding salt to tast different layers a good idea?
Salt counteracts bitterness. If you want to know what pure bitterness tastes like chew on a panadol (paracetamol). Sour is unbalanced acidity... Think like biting into a lemon or anything that makes your lips purse and your face pucker
Salt doesn't work for everyone, unfortunately.
Sour tastes and feels like strong lemony citrus, bitter tastes and feels like stalking your ex on instagram. Now if you don't have an ex to stalk, you can turn back to that lemon. Just go for the pith. To me, that part of the fruit resembles bitterness, and the taste lingers a bit. I think we over sugar our coffee to compensate for these flavors in nonoptimal brews.
I get confused too. Unpleasant is hard to distinguish from unpleasant. However, your taste buds can tell and different parts of your tongue are sensitive to different types of unpleasant. Generally, sour is more back of the mouth (like sour candies) and bitter is more tip of the tongue (very dark chocolate).
Light roasts tends to be more acidic and sour than medium. Medium roast if the blend is well tuned it'll be the balance between acidity and bitterness
think of finer grind will add a bitterness to the cup and use it as a go with grinding in case your coffee is too acidic
