Please! Even with a thermometer the stove has predetermined temperatures and there is nothing to do about that or I am wrong? What can you tell me about using the oven since I can set up the temperature more easily. Thank you!
You seem to use Ziplock bags for sous vide cooking... there seems to be a lot of debate on this. Do you not recommend them above a certain temperature? Do you not feel there is a risk in using them "not as intended"? I'm curious to hear your take.

I have a vacuum sealer that won't seal anything with liquids in, so I clip my open bag as you describe. All you do is lower the bottom half of your bag into the water until all the food is submerged, then let the water push the air out of the bag. Then you clip the top of the bag to your oven/pot. As long as all the food is submerged, it's not floating, & you didn't get any water in the bag, then you did it right.
If I prep let say 10 steaks sous vide for a night at the restaurant. How I will reheat each steak as the orders come ?
