I buy syringes and needles at the farm supply store.
The concentration of this injection brine at 5% seems high given the recommendations for immersion brining and final concentration in different meat or poultry.
So my chickens are about 4 pounds and my thanskgiving turkey is 15. Is there an amount of brine by weight? I can't imagine that the same amount of brine will work for both.
Don't brine a kosher bird. It's already been brined.

do you have any experience with Kosher turkeys which have been 'salted' prior to sale? I've brined and last year did this method and have had some concerns mainly with respect to missing out on being able to pull out pan juices. The bird seems too salty but the juiciness seems well worth it.. any way of dialing back on the sodium?
Thanks for simplifying it CS Team! Is this an equilibrium brine? These notes say overnight is a good amount of time, but in the equilibrium brine page, it says larger cuts can take much longer.

Do I use kosher salt or table salt in the brine, or does it matter? I noticed that some other brine recipes call for half as much salt if using kosher salt.
Is the recipe for Kosher salt, table salt, or does it make a difference? I note some brine recipies call for twice as much kosher as table salt.

Why would one not just use a turkey injector syringe? I purchased the syringes from Amazon, but they don't have the needle tips. Having a hard time finding the actual needle that fits over the end of the syringe. Any help or direction much appreciated.
Does anyone know what the deal is with the needles for the syringes in the link? They don't seem to sell them on amazon, do you have to purchase needles at the pharmacy?
