Here is a picture of the 72 hour short ribs served with the CS "umami bomb" roasted vegetables, and a Swiss chard boule stuffed with lemon scented barley risotto. Yes it was degrees F for the 72 hour short ribs.
Since the 72 hour short ribs were so popular at our Nov 2014 Supper Club, I repeated them at the Nov 2015 Supper Club.
These were served with the CS "umami bomb" roasted vegetables, and a Swiss chard "boule" filled with lemon barley risotto. Our guests raved again about the taste and texture! They were perfect medium rare across the whole short rib from edge to edge. And yes they were cooked sous vide for 72 hours at 144 degrees F.
