Wow, that is gorgeous. I can't tell you how much I am loving this tasting menu concept that you've launched. I'd definitely pay for a class for seasonal tasting menus.
I've been thinking about an egg course for my own upcoming dinner party and I'd love to present it in an edible nest of sorts - I was thinking of fried corn silk. I had the corn silk at Alinea one time and was blown away (it reminded me of popcorn with brownbutter). Have you ever fried corn silk? Any temp recommendations (it should be pretty simple but might as well ask).
I think I'll do a soft poached goose egg and serve it with a slice of foie gras torchon that I will cure myself with maple syrup and lightly smoke and serve with balsamic poached cherries from my back yard (which will tie it in with the Black Forest Cake I plan to finish with).
Excuse ther geekery, but how long did it take to paint that design on the eggs? I'm guessing pretty frickin long? Last time i checked into eggbots they weren't all that fast. Though yours looks a lot sturdier than the 3d printed things i've looked into, so maybe it's faster.
That design takes about 4-5 minutes.
What about the marker? Is it a waterproof one, or did you use one based on food inks?
I'd love to see a video of your technique for topping the eggs. I usually do mine with a knife which is tedious and often results in chipped edges (egg shell edges, not knife). I like the idea of using the disc sander, but how do you keep the egg inside clean? Also like the tip to submerge in boiling water prior to removing the membrane. Something so easy, yet, I've never done it. Thanks!
We use a waterproof Sharpie.
I have everything but the tamarind paste, even the egg bot. Will have to try this.
