I've learned to politely decline the cookies that my gluten-free friends bake since they're more like crackers, so I'll be sharing this recipe with them for sure.
It's important to note, however, that although oats themselves are gluten-free, the place where those oats are processed is likely not. So unless your oats say explicitly that they are gluten-free (I know Bob's Red Mill has some), they probably have a warning on the side saying "made in a facility that processes wheat". If your friends are truly celiac, and not just fashionable gluten-phobes, make sure to use the right oats!
What is the cream cheese ratio to use? Should it be a 1:1 ratio for butter replacement?
Chef you may also wish to try Bgreenfood.com for a line of Gluten-Free baking flours. They have all Organic, Non-GMO, Buckwheat flour, Millet flour, Sorghum flour, Brown Rice Flour, White Rice Flour and Black Rice Flour. One more thing to know about Oats, it is a rotating crop. Farmers who plant oats also plant wheat or corn on the same land... each year they plant one or the other rotating so when they grow the oats there may be some left over wheat that gets harvested or grown in between the oats.
WARNING: Just be aware that regular Oats are not safe for Celiacs or those very sensitive due to cross-contamination. You'll have to use Gluten-free Oats
I bake a gluten-free brownie and maybe my "trick" can be used in cookies! I simply switch the flour with marcipan in ration 1:1 - and i don't think almonds are grown close to wheat
The recipe, as well as most other common gluten free recipes, are probably best for those who want a gluten free diet, rather than those who need to avoid gluten at all costs due to Celiac disease. An estimated 1 in 133 Americans have Celiacs disease, but I must be honest - I have never met anyone who has this disease. Everyone I know choses to eat gluten free, its not life or death like the situation you are describing.
We made these this weekend and they came out flawlessly. We used gluten-free oat flour, rather than blitzing our own rolled oats as is suggested in the recipe. As it turns out, the Quaker Oats that Grant uses in the recipe are not actually gluten-free because they are stored in silos or transport vehicles that are also used to store wheat. I also lowered the salt to 12 grams instead of 15 and they still turned out a tiny bit too salty for my taste, and I like salt. And yes, I also used unsalted butter. If I were to make them again, I'd cut down the salt another two grams, and take out maybe 15-20% of the chocolate chips as they were really chocolaty, which slightly overwhelmed the cookie. They were still gloriously chewy, and super tasty.

Just made the Gf chocolate chip recipe....Although I made a few changes half milk and half dark choc
rough rough chopped. I am in love, I finally have a chewy gf cookie. Im thinking of adding a few roasted pecan bits to the next batch and only use dark chocolate. And Ill be working on making them DF as well, just because I can and some folks need it
Keep in mind that the combine used for off the shelf oats may have been used to harvest a wheat or barley crop prior to harvesting the oats thus causing cross contamination for those who are sensitive.
Can I skip the cream cheese and just add xanthan and locust bean gum directly (and keep the egg whites for moisture)? If so, how much, or in what ratios?

Don’t see any current chats...Hmm?? Any way I just signed up and thought I would see gluten free recipes but I only see 3 for baking. I was hoping to see a gluten free tortilla mix that might be close to the wheat flour texture but I guess I ill search other sites and try the oatmeal flour next. And I knew a lady that was seriously ill to the point of ending up in a wheel chair, kept getting tests and finally was told she had a serious celiac condition and made her get off all grains and anything containing gluten...plus research found that it causes baldness and it has a component that causes you to want more just like a drug. I do my own food research on food researchers. So much to know on health.

This recipe is fine for celiacs. You just have to use gluten-free oats. Also, there are a lot of people who I have met who have the disease. Just because you haven't met anyone doesn't mean it's not a problem.
I love this recipe but can I use dark brown sugar instead of light brow sugar? Some times I get a really chewie great cookie and other times it is cakie. Whats up?
