Don't want to split hairs here, but perhaps two small remarks from Germany regarding the explanations towards the original Schwarzwälder Kirschtorte: the alcohol used is usually not called Kirsch but Kirschwasser (meaning cherry water) and to be precise, its not a liqueur but rather a fruit brandy.
This recipe is absolutely fantastic. I love it. Any chance of a video surfacing of this course?

This tasting menu brings something to mind that you guys would be perfect to get some instruction out on, that I've never seen properly taught for a consumer/"home chef" market - at least not in the great and clear (yet sexy) way you do thangs. Maybe you guys have and I missed it. Saw the video on mise en place which is definitely part of it, but timing (working backwards from time of service for scheduling tasks, etc). Before working in a kitchen, I'd never thought about it - I'd accepted that some kind of voodoo magic happens that allows a chef (or person throwing a party) to be able to serve a multi-course meal on perfect time.
Just a thought, love what you guys do.

Ok, if this wasn't so awesome it would be creepy how much we are in sync. I've even been trying a similar idea for a cherry glazed chocolate truffle with my Black Forest Cake dish. I'll definitely have a few questions and will also be using my Black Forest Cake for my Masterchef audition in addition to my dinner party... I'll be sure to post the link when it's up.
... and I loved that I have all the ingredients for the sorbet on hand, including the liquid nitrogen until I read the 'cause that's normal' bit lol.

Read that the flourless cake recipe is not working well so I adjusted it to somebody else suggestions but then it became to thick So I suppose the recipe is ok (someone confirm??) and I will make it again tomorrow
